Creamy Lobster Sauce
Ingredients
1 tablespoon butter
1 small onion, finely minced
1 garlic clove, finely minced
14 1/2 ounces diced tomatoes, drained
1/2 cup dry sherry1/2 cup half and half
1/2 teaspoon salt
1/8 teaspoon white pepper
8 ounces cooked lobster meat
1/4 cup grated parmesan cheese
Directions
In sauce pan, over medium heat, melt butter. Add onion and garlic to pan. Cook for 2 minutes. Add tomatoes and sherry. Mix well. Cook for 5 minutes.
Add half and half, salt, and pepper. Stir until completely blended. Cook for 10 - 15 minutes.
Add lobster and parmesan cheese. Mix well. Reduce heat to medium low. Cook for 5 minutes.
Serve over pasta or lobster ravioli.
