Corn and Black Bean Salsa
Ingredients
10 plum tomatoes1 small sweet onion, chopped4 cloves garlic2 jalapenos
11 ounces shoepeg white corn, drained and rinsed
14 1/2 ounces black beans, drained and rinsed1 tablespoon lime juice
1 tablespoon cilantro
1 teaspoon salt1/2 teaspooon ground black pepper
Directions
Remove seeds from the tomatoes. Dice the tomatoes into small pieces. Dice the onion into small pieces. Mince the garlic. Remove the seeds from the jalapenos. Mince the jalapenos.
Place the tomatoes, onion, garlic and jalapenos in a bowl. Add corn and black beans. Mix. Add lime juice, cilantro, salt and pepper to vegetables. Mix well. Refrigerate for one hour before serving.
