Bolognese Sauce
Pasta with bolognese sauce is very popular in local resataurants and usually the pasta is papardelle or rigatoni. Bolognese is so much more than spaghetti sauce, takes hours to cook, and can't be rushed.
Ingredients
2 tablespoons butter
3/4 cup onion, minced
3/4 cup celery, minced
3/4 cup carrot, minced
2 teaspoons minced garlic
1 pound ground beef
1 pound ground pork
2 cups whole milk
2 teaspoons salt
1/4 teaspoon ground nutmeg
1 cup dry white wine
1 cup chicken broth
28 ounces ground tomatoes
Directions
In a large saucepan, over medium heat, melt butter. Add onion, celery, carrots, and garlic. Cook for 5 minutes.
Add ground beef and ground pork. cook for 10 mintes, breaking it up with a spoon, until crumbled. The meat should not be browned.
Add milk, salt, and nutmeg. Reduce heat to medium low. Simmer uncovered for 30 minutes or until milk is reduce by half.
Add wine, chicken broth, and tomatoes. Simmer uncovered for 2 hours.
