Tortellini Antipasto Salad
Ingredients
24 ounces cheese tortellini8 ounces provolone cheese, cubed8 ounces genoa salami, cubed12 ounces marinated artichoke hearts, drained4 ounces sliced black olives, drained
6 ounces sliced banana peppers, drained12 ounces roasted red peppers, drained1 pint grape tomatoes, cut in half8 ounces Italian dressing
Directions
Cook tortellini according to package directions. Drain, rinse with cold water and place in large bowl.
Add cheese, salami, artichoke hearts, olives, and banana peppers to tortellini.
Cut roasted red peppers into small pieces and add to tortellini. Add grape tomatoes to tortellini. Mix well. Add Italian dressing and mix well.
Refrigerate for at least one hour.
