Tex-Mex Quinoa Salad
Ingredients
1 cup quinoa6 ounces baby spinach, chopped15 ounces black beans, rinsed and drained8 ounces frozen corn, thawed1 pint grape tomatoes, cut in half
3 scallions, chopped2 tablespoons lime juice
4 tablespoons olive oil
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
Cook quinoa according to package directions. Set aside to cool.
In large bowl, add quinoa, spinach, black beans, corn, tomatoes, and scallions. Mix well.
In a small bowl, add lime juice, olive oil, cumin, chili powder, salt and pepper. Wisk for 30 seconds. Pour dressing over salad. Mix well. Refrigerate for at least one hour.
