Tex Mex Cole Slaw
I wanted to make a coleslaw, with a different twist, to have with barbecued ribs. I had a couple of ideas and finally settled to tex mex. The corn and beans give the coleslaw a different text than traditional coleslaw and the lime juice adds a nice tangy flavor.
Ingredients
24 ounces shredded coleslaw mix
1 small red pepper, sliced thin
3/4 cup fresh corn kernels
3/4 cup black beans, drained and rinsed
3/4 cup shredded carrots
1 jalapeno pepper, seeded and minced1/4 cup vegetable oil
1 tablespoon white vinegar
1 tablespoon lime juice2 teaspoons sugar
1 teaspoon salt
1/2 teaspoon pepper
Directions
In a large bowl, combine coleslaw mix, red pepper, corn, black beans and carrots.
In a bowl, combine oil, vinegar, lime juice, sugar, salt, and pepper. Whisk until well blended.
Add dressing to coleslaw mix. Mix well.
Refrigerate for at least one hour before serving.
