Taco Salad
Taco salad is one of my favorite salads and one where the toppings can be customized to your likes and dislikes. You could add guacamole, black olives, hot sauce, and/or black beans. Make it your own. You can use tortilla chips or buy tortilla bowls instead of making them. If you are having a dinner where everyone likes different things, you can put each item on the table and let everyone make their own.
Ingredients
1 small onion, chopped1 pound ground beef
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons chili powder
2 teaspoons cumin
15 1/2 ounces salsa
4 large flour tortillas
5 cups torn iceburg lettuce
20 grape tomatoes, cut in half
4 tablespoons sweet and spicy French dressing
1 cups shredded Mexican cheese
8 tablespoons sour cream
4 scallions, chopped
Directions
In a large saucepan, over medium heat, add onion and ground beef . Cook for 10 minutes, breaking meat up with a spoon, until meat is cooked and crumbled.
Add salt, pepper, chili powder, and cumin. Mix well. Cook for 5 minutes.
Add salsa. Reduce heat to medium low and cook for 1 hour.
Place tortillas in tortilla molds or oven safe bowls. Spray with cooking spray. Bake at 375 for 12 minutes.
Place 1/4 lettuce in each of the bowls. Top with meat mixture and 1/4 grape tomatoes. Drizzle each salad with 2 tablespoons French dressing. Top with 1/4 cup shredded cheese, 2tablesppons sour cream, and 1 chopped scallion.
