Shrimp Cobb Salad
I had just about everything in my refrigerator to make a cobb salad. I had shrimp and feta cheese so they replaced the chicken and blue cheese. It was one of the best salads I ever made.
Ingredients
12 ounces raw shrimp
1 teaspoon black pepper
1 1/2 teaspoons granulated garlic
4 cups iceberg lettuce
4 slices crispy bacon
1/2 cucumber, sliced12 grape tomatoes, cut in half
2 hardboiled eggs, cut into quarters
1 avocado, chopped
2 ounces crumbled feta cheese
Directions
Place shrimp in a bowl. Add pepper and garlic. Mix well. In a large saute pan, over medium heat, add 3 tablespoons water. Add shrimp to pan. Cook shrimp for 5 to 10 minutes, removing each shrimp from the pan as it is cooked through. Refrigerate for 2 hours.
This recipe makes 2 salads so you will put 1/2 of each ingredient into each salad bowl. Tear lettuce into bite size pieces and place in salad bowls.
Arrange 1/2 of the shrimp, bacon, cucumbers, grape tomatoes, eggs, and avocado around the edge of each bowl. Place crumbled feta cheese in the center of the bowl.
Servr with your favorite salad dressing.
