Salmon Salad
Ingredients
1 pound fresh salmon, skin removed
2 tablespoons mayonnaise1/2 cup diced red onion
1/2 cup diced celery
3/4 cup mayonnaise
1 tablespoon Italian dressing seasoning
Directions
Place salmon on a baking sheet line with parchment paper. Spread 2 tablespoons mayonnaise on top of salmon. Season with salt and pepper. Bake at 350 for 25 minutes. Allow to cool for 15 minutes. Place salmon in a bowl and break it up into small pieces. Refrigerate for 1 hour.
Place onions and celery in bowl with salmon. In a small bowl add mayonnaise and Italian dressing seasoning. Mix well. Add mayonnaise mixture to salmon. Mix well. Refrigerate for 1 hour.
Serve in a sandwich or on top of a garden salad.
