Roasted Sweet Potato Salad
This is very different from a traditional potato salad. It is sweet and savory and pairs very well wth grilled porkchops or roast pork.
Ingredients
2 pounds sweet potatoes
1 apple3/4 cup dried cranberries1 cup mayonnaise1/2 teaspoon salt1/2 teaspoon ground black pepper
Directions
Peel the sweet potatoes and cut into bite size cubes. Place potatoes on a baking sheet. Bake at 400 for 30 minutes. Place cooked potatoes in a bowl and refrigerate for at least 4 hours.
Peel apple, remove seeds and cut into bite size pieces. Add apple to sweet potatoes. Add cranberries, mayonnaise, salt and pepper to sweet potatoes. Mix well.
Refrigerate for at least 1 hour before serving.
