Lemony Quinoa Salad
Ingredients
1 cup quinoa, rinsed
2 cups chicken broth
1 apple
1 medium cucumber
3/4 dried cranberries
1 avocado2 tablespoons lemon juice
1/4 cup olive oil
1 teaspoon lemon zest
1/2 teaspoon salt
Directions
Cook quinoa, in chicken broth, according to package directions. Set aside to cool.
Peel and core apple. Cut into bite size pieces. Peel cucumber and cut into bite size pieces. Remove pit from avocado, scoop out of skin. Cut avocado into bite size pieces.
In large bowl, add quinoa, apple, cucumber, cranberries, and avocado . Mix well.
In a small bowl, add lemon juice, olive oil, lemon zest, and salt. Wisk for 30 seconds. Pour dressing over salad. Mix well. Refrigerate for at least one hour.
