Italian Pasta Salad
This is one of my favorite recipes to bring to summer parties. It is easy to make and everyone loves it. Sometimes I add marinated mushrooms and sliced banana peppers. Add some cubed ham and cheese, and this salad could be a meal.
Ingredients
16 ounces penne pasta, cooked according to package directions12 ounces marinated artichoke hearts, drained and cut in half4 ounces sliced black olives, drained12 ounces roasted red peppers, drained and cut into strips1 pint grape tomatoes, cut in half8 ounces Italian salad dressing
Directions
In large bowl, add pasta, artichoke hearts, olives and roasted red peppers. Mix well. Add grape tomatoes and Italian salad dressing. Mix well.
Refrigerate for at least one hour.
