Grilled Chicken Salad
During the summer I would always marinate chicken and grill it. I would frequently use Italian dressing because it was a favorite of my guests and I would always cook extra so I could make chicken salad for lunch the next day. You can use your favorite dressing of marinade in place of the Italian dressing.
Ingredients
2 pounds boneless, skinless chicken breast
8 ounces Italian dressing3/4 cup mayonnaise1/2 teaspoon seasoned salt1/4 teaspoon pepper
Directions
Place chicken in a bowl. Add Italian dressing. Mix well. Refrigerate for at least two hours.
Grill or broil chicken until it has an internal temperature of 165. Allow chicken to cool.
Place chicken, mayonnaise, salt, and pepper in a food processor. Pulse 10 - 15 times, or until all of the chicken is chopped. Place in a bowl and mix well. Serve in a sandwich or on top of a garden salad.
