Deli Pasta Salad
My husband told me about this salad he made at the end of the week with all of the leftover deli meat and fresh veggies. It was a hot summer day and I had some leftover pasta, so I decided to make the salad. Unfortunately, I didn't have the leftover meat adn veggies, but a quick trip to the market took care of that. You could definitely add provolone cheese and banana peppers to this salad.
Ingredients
8 ounces penne pasta, cooked according to package directions1/2 red pepper, chopped
1/3 red onion, chopped
2 celery stalks, chopped
10 grape tomatoes, cut in half1/2 pound thick cut ham, chopped
1/4 pound thick cut genoa salami, chopped1 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
In large bowl, add pasta, red pepper, red onion, celery, ham and salami. Mix well. Add mayonnaise. Mix well.
Refrigerate for at least one hour.
