Cowboy Caviar
Ingredients
2 ears corn
15 ounces black beans, rinsed and drained
15 ounces pinto beans, rinsed and drained1 pint grape tomatoes, cut in half
1 red pepper, seeds removed
1 yellow pepper, seeds removed
3 scallions, chopped3 tablespoons fresh lime juice
3 tablespoons olive oil
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
Cut kernels off corn cob.
In large bowl, add corn, black beans, pinto beans, tomatoes, red pepper, yellow pepper and scallions. Mix well.
In a small bowl, add lime juice, olive oil, cumin, salt and pepper. Wisk for 30 seconds. Pour dressing over salad. Mix well. Refrigerate for at least one hour.
