Buffalo Chicken Gnocchi
I don't remember what inspired this recipe, but I was probably having guests for dinner who love anything with buffalo sauce. This is definitely a dinner salad and it could be served hot.
Ingredients
1 pound gnocchi9 ounces cooked chicken1 red pepper, diced
1 green pepper, diced
5 scallions, diced4 ounces buffalo sauce4 ounces ranch dressing
Directions
Cook gnocchi according to package directions. Drain, place in a bowl and chill for 1 hour.
Cut chicken into bite size pieces. Add to chilled gnocchi.
Add red peppers, green peppers, scallions, buffalo sauce and ranch dressing to gnocchi. Mix well.
Refrigerate for one hour before serving.
