Brown Rice Salad
A friend of mine asked me to make a brown rice salad and gave me a recipe she found but the recipe had ingredients she didn't want in the salad. I took the recipe and changed it to include the ingredients she wanted. She loved it and when she is busy, asks me to make it.
Ingredients
1 cup brown rice, uncoooked1/2 red onion, diced
15 1/2 ounces black beans, drained and rinsed2 stalks celery, diced
1/2 cup dried cranberries3/4 cup balsamic vinaigrette salad dressing
Directions
Cook brown rice according to package directions. Set aside to cool.
In large bowl, add brown rice, red onion, black beans, celery, and cranberries. Mix well.
Add balsamic sressing to salad Mix well. Refrigerate for at least one hour.
