Blue Cheese Salad Dressing
One of the favorite things that my father made was blue cheese salad dressing. He didn't make it very often, but when he did it was a treat. This is a lighter version of his recipe, that I often use as a dip and is a favorite for many from my husband's family.
Ingredients
8 ounces crumbled blue cheese
1 tablespoon rice wine vinegar
1/4 cup vegetable oil
1/2 teaspoon pepper
3/4 teaspoon salt
16 ounces light sour cream
Directions
In a medium bowl, add blue cheese vinegar, oil, salt and pepper. Mix well.
Add sour cream. Mix well. Refrigerate for at least one hour.
Serve on a salad or as a dip with crackers.
