Blue Cheese Potato Salad
My aunt loves blue cheese. She was visiting from Wisconsin and we were having a family cookout. I wanted to make something a little different, that included blue cheese. They asked me to bring potato salad, so I created this recipe. It was a hit. I did make some regular potato salad for those who are not blue cheese fans.
Ingredients
3 pounds russet potatoes1/4 cup dry white wine1 cup mayonnaise6 slices bacon, cooked until crispy
4 ounces crumbled blue cheese1 teaspoon salt1 teaspoon ground black pepper
Directions
Peel the potatoes and cut into bite size cubes. Place potatoes in a pan, cover with water and bring to a boil. Reduce heat to medium high and cook potatoes for 15 - 20 minutes, or until fork tender. Drain and place in large bowl.
Add wine to potatoes and gently mix. Let stand for 20 minutes. Crumble bacon. Add mayonnaise, bacon, blue cheese, salt and pepper to potatoes. Mix well.
Refrigerate for at lease 1 hour before serving.
