Bacon and Cheddar Potato Salad
A loaded baked potato inspired this recipe. I was going to a cookout and thought about making baked potatoes. That seemed a little awkward to bring to a party so why not transform the loaded potato to a potato salad. It was a success.
Ingredients
3 pounds russet potatoes, peeled and cut into bite size pieces8 ounce bacon, cooked until crispy and crumbled
1 bunch scallions, chopped
1 cup shredded cheddcar cheese1 cup mayonnaise2 teaspoons seasoned salt1 teaspoon pepper
Directions
Place potatoes in 5 quart sauce pan, cover with water and bring to a boil. Reduce heat to medium high and boil for 15 minutes. Make sure the are fork tender. Drain, place in a bowl and chill for 2 hours.
Add bacon, scallions, cheddar cheese mayonaisse, salt and pepper to potatoes. Mix well. Chill for at least one hour.
