Apple Potato Salad
This salad is crunchy, sweet and savory. The dressing is light and a little tangy. This salad is a great side for roast pork and smoked sausage.
Ingredients
3 pounds russet potatoes, peeled and cut into bite size pieces1/2 cup diced onion
1/2 cup diced celery
1 cup diced apple1 tablespoon spicy brown mustard
3 tablespoons olive oil
3 tablespoons rice wine vinegar
3 tablespoons mayonnaise1/2 teaspoon salt1/4 teaspoon pepper
Directions
Place potatoes in 5 quart sauce pan, cover with water and bring to a boil. Reduce heat to medium high and boil for 15 minutes. Make sure the are fork tender. Drain, place in a bowl and chill for 2 hours.
In a large bowl add potatoes, onion, celery, and apples. Mix well.
In a small bowl add mustard, olive oil, vinegar, mayonsaise, salt and pepper. Wisk until completely combined. Add to potatoes. Mix well. Chill for at least one hour.
