Pepper Steak Risotto
Risotto is one of my favorite dishes to make and this is one of my favorite risotto dishes to make. I wanted to make a risotto with the flavors of a steak sandwich and with lots of flavor. This is the recipe I came up with and my husband loves it, so now I make it quite often.
Ingredients
1 tablespoon olive oil
1 small sweet onion, chopped
2 red bell peppers, chopped
14 ounces shaved steak
4 tablespoons butter
2 cups arborio rice
1 cup dry white wine
1 1/2 teaspoons salt1 teaspoon pepper2 teaspoons minced garlic
4 cups beef broth
1/2 cup grated parmesan cheese
Directions
In a large saute pan, over medium heat, heat olive oil. Add onions and peppers to pan and cook for 5 minutes. Add shaved steak to pan, stirring frequently, until steak is no longer pink. Remove steak, peppers, and onions from pan and set aside.
Melt butter in pan. Add rice to pan. Stir until rice is completely mixed with butter. Cook for 5 minutes or until rice is lightly toasted.
Add wine, salt, pepper, and garlic to rice. Reduce heat to medium low and cook, stirring frequently, until wine is completely absorbed into rice.
Add 1 cup of beef broth to rice. Cook, stirring frequently, until broth is completely absorbed into rice. Repeat with the next three cups of broth.
Add steak mixture to rice. Mix well. Add parmesan cheese to rice. Mix well. Cook for 2 minutes. Serve immediately.
