Italian Sausage and Spinach Risotto
Ingredients
1 pound ground Italian sausage
1 small sweet onion, chopped
2 cups arborio rice
1 cup dry white wine
1 1/2 teaspoons salt1 teaspoon pepper1 teaspoon granulated garlic
4 cups vegetable broth
12 ounces baby spinach
1/2 cup grated parmesan cheese
Directions
In a large sauce pan, over medium heat, cook onion and Italian sausage, breaking it up with a spoon until browned and crumbled.
Add rice to pan. Stir until rice is completely mixed with sausage mixture. Cook for 5 minutes or until rice is lightly toasted.
Add wine, salt, pepper, and garlic to rice. Reduce heat to medium low and cook, stirring frequently, until wine is completely absorbed into rice.
Add 1 cup of vegetable broth to rice. Cook, stirring frequently, until broth is completely absorbed into rice. Repeat with remaining broth, adding broth one cup at a time. Test to see if rice is cooked before adding each cup of broth.
Add spinach to pan. Mix until spinach is wilted. It will take about 2 or 3 minutes.
Add parmesan cheese and mix well. Serve immediately.
