Spinach, Onion, and Mushroom Quesadillas
This is a light quesadilla that is perfect for lunch. It was a hot day and I wasn't very hungry, so I looked at the veggies I had in the fridge. I had lots of choices but this looked really good and quick to make. This recipe is definitely a keeper.
Ingredients
1 tablespoon olive oil
16 ounces sliced mushrooms
1 large sweet onion, sliced
12 ounces baby spinach
1 teaspoon salt
1/2 teaspoon pepper
4 large flour tortillas
8 ounces shredded cheddar cheese
Directions
In a medium saute pan, heat olive oil over medium heat. Add mushrooms and onions. Cook for 10 minutes. Add spinach, salt and pepper. Cook for 5 minutes, stirring frequently.
Place spinach mixture on 1/2 of each tortilla. Sprinkle 1/4 cheese on top of spinach. Fold tortilla in half and place on baking sheet.
Bake at 350 for 12 minutes.
