Reuben Quesadillas
I cooked a corned beef dinner and had plenty of leftover corned beef. It was so tender it would make a great reuben sandwich. I didn't have any rye bread but I did have flour tortillas so why not make the reuben into a quesadilla. It was so tasty and lighter than the traditional reuben.
Ingredients
4 large flour tortillas
8 slices swiss cheese12 ounces corned beef, sliced8 ounces sauerkraut, rinsed and drained8 tablespoons thousand island dressing
Directions
Place two slices cheese on 1/2 of each tortilla. Place 3 ounces corned beef on swiss. Place 2 ounces sauerkraut on corned beef. Spread 2 tablespoons thousand island dressing on sauerkraut. Fold tortillas in half and place on baking sheet.
Bake at 375 for 12 minutes.
