Florentine Quesadillas
I am always thinking of different fillings for quesdillas. Sometimes I am inspired by a meal I had or by items in my refrigerater. A pizza I saw on TV inspired this one. It looked so good I decided to try it as a quesadilla and I am glad I did.
Ingredients
1 tablespoon olive oil
9 ounces baby spinach
1/2 teaspoon granulated garlic10 ounce roasted red peppers, chopped
8 slices prosciutto
4 large flour tortillas
8 ounce shredded Italian cheese blend
Directions
In a medium saute pan, heat olive oil over medium heat. Add spinach and granulated garlic. Cook for 5 minutes, stirring frequently. Add roasted peppers and cook for 4 minutes.
Place 2 prosciutto slices on 1/2 of each tortilla. Place 1/4 spinach mixture on prosciutto. Sprinkle 1/4 cheese on top of spinach. Fold tortilla in half and place on baking sheet.
Bake at 350 for 12 minutes. Serve with marinara or pizza sauce.
