Chili Cheese Quesadillas
I had some leftover chili and wanted to make a quick lunch, so I used the chili and some shredded cheese to fill a quesadilla. I served it with some sour cream on the side.
Ingredients
1 onion, chopped
1 pound ground beef14 1/2 ounces fire roasted diced tomatoes
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon cumin
4 large flour tortillas
2 cups mexican blend cheese
Directions
In a large saute pan, over medium heat, add onions and ground beef to pan. Cook for 10 minutes breaking meat up with a spoon until it is crumbled and browned.
Add dice tomatoes, salt, chili powder and cumin to beef. Mix well. Reduce heat to medium low. Cook for 30 minutes. Remove from heat and let cool for 10 minutes.
Place 1/4 of the filling on each tortilla. Sprinkle 1/2 cup of cheese onto meat mixture. Fold tortilla in half and place on baking sheet.
Bake at 350 for 12 minutes. Serve with salsa and sour cream.
