Chicken Fajita Quesadillas
This is like a fajita without the sizzle. I was planning on making fajitas but around dinner time I became a little lazy. Even though fajitas traditionally don't have cheese as an ingredient, you need cheese to hold the quesadilla together.
Ingredients
1 tablespoon olive oil
1 onion, sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 orange pepper, sliced
16 ounces boneless, skinless chicken breast1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon granulated garlic
4 large flour tortillas
1 tablespoon lime juice
4 slices american cheese
Directions
In a large saute pan, over medium heat, heat oil. Add onions and peppers to pan. Cook for 5 minutes.
Cut chicken into bite size pieces. Add chicken, salt, pepper, garlic, and lime juice to pan. Mix with cooked vegetables. Cook for 8 - 10 minutes or until chicken is cooked.
Place a slice of cheese on each tortilla. Place 1/4 of the filling on half of each tortilla. Fold tortilla in half and place on baking sheet.
Bake at 350 for 12 minutes. Serve with sour cream.
