Chicken Caprese Quesadillas
This is my caprese quesadilla with the addition of chicken and fresh basil.
Ingredients
1 tablespoon olive oil
12 ounces chicken, cut into thin strips1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon granulated garlic
4 large flour tortillas
12 slices fresh mozzarella
12 plum tomato slices, seeds removed
1/4 cup chopped fresh basil
Directions
Place 3 mozzarella slices on each tortilla. Place 3 tomato slices on mozarella. Sprinkle 1/4 of basil on top of cheese. Place 1/4 of the chicken on top of basil. Fold tortilla in half and place on baking sheet.
Bake at 350 for 12 minutes. Serve with marinara or pizza sauce.
