Chicken and Refried Bean Quesadillas
Ingredients
1 pound boneless, skinless chicken breast
24 ounces salsa16 ounces refried beans4 large flour tortillas
2 cups mexican blend cheese
Directions
In a large saute pan, over medium low heat, add chicken and salsa. Cook, covered, for2 hours, stirring occasionally. Shred chicken. Cook uncovered for 20 minutes, or until liquid from salsa is gone.
Add refried beans to chicken. Mix well. Reduce heat to medium low. Cook for 5 minutes. Remove from heat and let cool for 10 minutes.
Place 1/4 of the filling on each tortilla. Sprinkle 1/2 cup of cheese onto meat mixture. Fold tortilla in half and place on baking sheet.
Bake at 350 for 12 minutes. Serve with salsa, guacamole, and sour cream.
