Caprese Quesadillas
Fresh mozzarella and tomato is one of my favorite food combinations so why not create a quesadilla with those flavors. Make sure that you remove the seeds from the tomatoes, otherwise your quesadillas will be soggy.
Ingredients
4 large flour tortillas
2 cups shredded mozzarella cheese12 slices fresh mozzarella12 plum tomato slices, seeds removed4 teaspoons Italian seasoning1/2 teaspoon salt
1/2 teaspoon pepper
Directions
Sprinkle 1/2 cup shredded mozzarella on 1/2 of each tortilla. Place 3 tomato slices on mozarella. Place 3 mozzarella slices on tomato slices. Sprinkle 1 teaspoon Italian seasoning on top of cheese. Sprinkle top each tortilla with salt and pepper. Fold tortilla in half and place on baking sheet.
Bake at 350 for 12 minutes.
