Beef and Bean Quesadillas
I love to put refried beans in a quesadilla. They add flavor and texture. Along with the seasoned ground beef and cheese, it creates a very tasty meal.
Ingredients
1 tablespoon olive oil
1/2 onion, chopped
1 pound ground beef16 ounces refried beans1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon chili powder
1/2 teaspoon cumin
4 large flour tortillas
2 cups mexican blend cheese
Directions
In a large saute pan, over medium heat, heat oil. Add onions to pan. Cook for 5 minutes
Add ground beef to pan. Mix with onions. Cook for 5 minutes, breaking meat up with a spoon until it is crumbled and browned.
Add refried beans, salt, pepper, chili powder and cumin to beef. Mix well. Reduce heat to medium low. Cook for 5 minutes. Remove from heat and let cool for 10 minutes.
Place 1/4 of the filling on each tortilla. Sprinkle 1/2 cup of cheese onto meat mixture. Fold tortilla in half and place on baking sheet.
Bake at 350 for 12 minutes. Serve with salsa, guacamole, and sour cream.
