Sweet and Sour Chicken with Rice
This is one of my husband's favorite meals. I usually have all of the ingredients in my refrigerater and pantry, so when he says the I haven't made that chicken in the crockpot in a while, I can make it that day or the next.
Ingredients
8 boneless, skinless chicken thighs2 red peppers, cut into bite-size pieces1 sweet onion, cut into bite-size pieces20 ounces pineapple chunks in pineapple juice12 ounces chili sauce
1/2 cup water1 teaspoon salt 1 teaspoon granulated garlic1 teaspoon ground black pepper1 cup white rice, uncooked
Directions
Place chicken thighs in crock pot. Add peppers, onions, pineapple, chili sauce, water, salt, garlic and pepper. Cook on low for 6 hours.
Add rice and mix well. Cook on high for 30 minutes or until rice is done.
