Sweet and Sour Chicken
Ingredients
1 tablespoon olive oil
1 lb boneless, skinless chicken breasts, cut into bite size pieces8 ounces pineapple chunks, with juice5 ounces duck sauce
2 tablespoons oyster sauce
16 ounces frozen stir fry vegetables
Directions
In a large saute pan, heat olive oil over medium high heat. Cook chicken pieces for 1 minute on each side.
Add pineapple chuncks, 1/2 cup pineapple juice, duck sauce, and oyster sauce. Mix well. Cook on medium low for 8 minutes.
Add vegetables. Mix well. Cook, covered, for 15 minutes.
Serve with rice or noodles.
