Spinach and Ricotta Stuffed Chicken
My sister and her family were coming over for dinner and I wanted to make something different. I knew that they love spinach so a creamy mixture of ricotta cheese and spinach would make a perfect filling for the chicken. By partially slicing the chicken and filling each slice with the creamy spinach mixture, there would be some of everything in every bite.
Ingredients
4 boneless, skinless chicken breasts1 tablespoon olive oil16 ounces baby spinach16 ounces ricotta cheese1 teaspoon granulated garlic1 teaspoon salt½ teaspoon pepper½ cup parmesan cheese
Directions
Make vertical cuts, about ¾ of an inch apart, without cutting all the way through the chicken. Place chicken in baking dish.
In a medium saute pan, over medium heat cook, heat olive oil. Add baby spinach and granulated garlic. Saute for 3 - 4 minutes or until spinach is wilted. Turn off heat. Add ricotta, salt and pepper. Mix well.
Place 1 to 2 tablespoons of ricotta mixture in each cut of the chicken. Sprinkle parmesan cheese over chicken. Bake for 30 minutes at 350.
