Pineapple Chicken
Ingredients
6 tablespoons cornstarch1/2 teaspoon salt1/4 teaspoon pepper2 tablespoons butter1 1/2 pounds thin sliced chicken breast cutlets1 red pepper, cut into bite size pieces20 ounces pineapple chunks in juice8 ounces sliced water chestnuts1/2 cup orange juice2 tablespoons soy sauce2 tablespoons ketchup
Directions
In a flat dish, combine cornstarch, salt, and pepper. In large saute pan, over medium high heat, melt butter. Coat chicken cutlets in cornstarch. Cook for 2 minutes on each side. Set aside.
Add peppers to saute pan and cook for 2 minutes. Add remaining ingredients, reduce heat to medium and cook for 5 minutes. Sauce should start to slightly thicken
Add chicken to sauce, reduce heat to medium low and cook for 10 minutes.
