Orange Chicken
It was springtime and I wanted to make a chicken dish that was light with a citrus flavor. I had made Orange Chicken a long time ago for a wedding but I never wrote down the recipe. I recreated that recipe and now it is one of my favorites.
Ingredients
1 1/2 lb boneless, skinless thin sliced chicken breast
3/4 cup cornstarch1/2 teaspoon salt1/2 teaspoon pepper4 tablespoons butter1 tablespoon olive oil2 cups orange juice
1 tablespoons cornstarch
1 1/2 tablespoons soy sauce
2 tablespoons honey
Directions
In a medium bowl, mix cornstarch, salt and pepper.
Dip each piece of chicken in cornstarch.
In a large saute pan, heat butter and olive oil over medium high heat. Cook chicken pieces for 2 minutes on each side. Do not over-crowd the pan. Set chicken aside.
Reduce heat to medium. Add orange juice and cornstarch to pan. Stir with a wisk until completely blended. Cook for 5 - 10 minutes until sauce starts to thicken. Add soy sauce and honey. Stir with wisk. Return chicken to the pan and mix until chicken is coated with sauce. Cook for 5 minutes. Serve with rice.
