Mexican Chicken
Ingredients
1 sweet onion, chopped
2 pounds boneless, skinless chicken thighs
28 ounces crushed tomatoes
2 teaspoons salt
2 teaspoons pepper
1 teaspoon granulated garlic
2 TB chili powder
2 tsp cumin
Directions
Place onions and chicken in crock pot.
Add tomatoes, salt, pepper, garlic, chili powder, and cumin to crockpot. Mix well. Cook on low for 6 hours.
Shred pork with two forks and mix well so chicken is coated with sauce. Serve on your favorited roll or in a taco or quesadilla with cheese.
