Meditteranian Chicken
Ingredients
1 1/2 pounds boneless, skinless chicken breasts, cut into bite size pieces3 tablespoons flour1 teaspoon Italian seasoning1 teaspoon salt1/2 teaspoon ground black pepper2 tablespoon olive oil14 ounces quartered artichoke hearts8 ounces sliced mushrooms12 ounces roasted red peppers, cut into strips
4 ounces sliced black olives1 cup chicken broth3/4 cup dry white wine
Directions
In medium bowl add flour, Italian seasoning, salt and pepper. Add chicken and mix until chicken is completely coated.
Heat 1 tablespoon of the oil in a large saute pan over medium high heat. Add chicken and cook for 3 - 4 minutes, turning occasionally, until lightly browned and just cooked through. Transfer to a bowl and set aside.
Reduce heat to medium. Heat the remaining 1 tablespoon oil. Add the artichoke hearts, mushrooms and red peppers. Cook, stirring occasionally, for 5 minutes. Add the wine and broth. Cook until the liquid is reduced by half, about 5 minutes.
Add the chicken to the pan, mix until chicken is coated with the sauce. Cook for 5 minute, stirring occasionally, until heated through and the liquid thickens slightly, about 4 minutes. Serve over linguini.
