French Onion Chicken Casserole
I love French Onion Soup. I wanted to make a chicken dish include the flavors of the onion soup and would be a hearty meal for the winter. This came out so much better than I expected it to. I will be creating a crockpot version of this recipe.
Ingredients
6 tablespoons butter, divided
4 boneless, skinless chicken thighs, cut into bite size pieces
2 tablespoons flour
1/2 teaspoon seasoned salt
1/2 teaspoon pepper
2 sweet onions, sliced thin
2 cups vegetable broth
12 ounces egg noodles, cooked
1 cup shredded swiss cheese
Directions
Place chicken in a bowl. Add flour, salt and pepper. Mix until chicken is completely coated with flour.
In a large sauce pan, melt 4 tablespoons butter, over medium heat. Add chicken. Cook for 5 minutes, stirring occasionally. Remove from pan and set aside.
Melt remaining 2 tablespoons butter in sauce pan. Add onions to pan. Cook for 10 minutes, stirring frequently.
Add vegetable broth to onions. Cook for 5 minutes.
Add chicken to onions. Stir until chicken is coated with broth and onions. Reduce heat to medium low. Cook for 5 minutes. Sauce should be slightly thickened.
Add noodles to sauce pan. Mix until noodles are completely coated with sauce. Place chicken mixture in a 13 x 9 baking dish. Sprinkle swiss cheese on top. Bake at 375 for 25 minutes.
