Chicken Noodle Casserole
I wanted to make something heartier than chicken noodle soup but with a taste similar to chicken noodle soup. It is a comfort food with a creamy texture and lots of vegetables. I am not a fan of peas but you could add a cup of peas to this recipe.
Ingredients
1 tablespoon vegetable oil
1 cup onion, cut into bite size pieces
2 cups celery, cut into 1/4 inch slices
2 cups carrots, cut into 1/4 inch slices10 3/4 ounce can cream of chicken soup
10 3/4 ounce can cream of celery soup
3/4 cup half and half
4 cups cooked chicken breast
1/2 teaspoon seasoned salt
1/2 teaspoon pepper
1/2 tablespoon poultry seasoning
12 ounces egg noodles, cooked
1/2 cup panko bread crumbs
Directions
In a large sauce pan, heat oil over medium heat. Add onions, celery and carrots. Cook for 10 minutes, stirring occasionally.
Add chicken soup, celery soup, and half and half to sauce pan. Mix well. Cook for 5 minutes.
Add chicken, salt, pepper, and poultry seasoning to sauce pan. Mix well. Cook for 5 minutes.
Add noodles to sauce pan. Mix until noodles are completely coated with sauce. Place chicken mixture in a 13 x 9 baking dish. Sprinkle bread crumbs on top. Bake at 375 for 25 minutes.
Notes:
You can substitute turkey or ham for chicken.
