Chicken Marsala
Chicken or veal marsala is my favorite dish to order when going to one of the great Italian restaurants in Rhode Island. I did some research on the internet and found that it is much easier to make than I thought. I tried a couple of different variations, I took the best of each and this is the result. I make this at home quite often so I need a new favorite when going out to eat.
Ingredients
4 boneless, skinless chicken breasts1 cup panko breadcrumbs2 teaspoon Italian seasoning1 teaspoon salt1 teaspoon ground black pepper1 tablespoon olive oil
4 tablespoons butter8 ounces sliced mushrooms1 teaspoon granulated garlic2 tablespoons flour3/4 cup chicken broth3/4 cup marsala wine
Directions
Pound chicken breasts to 3/4 inch thickness.
In medium bowl add bread crumbs, Italian seasoning, salt and pepper. Coat chicken breasts with bread crumb mixture.
In a large saute pan, heat butter and olive oil over medium high heat. Cook chicken breasts for 2 - 3 minutes on each side. Set chicken aside.
Reduce heat to medium. Add mushrooms and garlic. Cook for 5 minutes, stirring frequently. Add flour to mushrooms and stir until mushrooms are coated with flour. Cook for 2 minutes. Add chicken broth and marsala wine. Stir and cook for 3 minutes. Places chicken breasts in pan and coat with sauce. Cook for 5 - 6 minutes. Serve with mashed potatoes.
