Chicken Francaise
This recipe was inspired by a friend of mine. She wanted Chicken Francaise, but the pieces of chicken needed to be bite size and the recipe had to be gluten free. She loved it. This dish is great for a buffet or a family style dinner.
Ingredients
2 lbs boneless, skinless chicken breasts, cut into bite size pieces1 1/2 cups cornstarch1/2 teaspoon salt1/2 teaspoon pepper3 eggs, beaten4 tablespoons butter1 tablespoon olive oil2 cups chicken broth
2 tablespoons cornstarch
1 1/2 tablespoons lemon juice
Directions
In a medium bowl, mix cornstarch, salt and pepper.
Dip each piece of chicken in cornstarch, then in egg, then in cornstarch.
In a large saute pan, heat butter and olive oil over medium high heat. Cook chicken pieces for 2 minutes on each side. Do not over-crowd the pan. Set chicken aside.
Reduce heat to medium. Add chicken broth and cornstarch to pan. Stir with a whisk until completely blended. Cook for 5 - 10 minutes until sauce starts to thicken. Add lemon juice and stir with a whisk. Return chicken to the pan and mix until chicken is coated with sauce. Cook for 5 minutes. Serve over penne or linguini.
