Chicken Cordon Bleu
This is a claasic recipe that never gets old. The traditional recipe uses swiss cheese but I wanted to do something a little different. You can certainly use swiss cheese instead of the provolone, or even your favorite sliced cheese, such as muenster, american, or monteray jack. To make it a little spicy, use spicy ham with pepperjack cheese.
Ingredients
4 boneless, skinless chicken breasts
4 tablespoons cornstarch
1 egg
1 cup panko bread crumbs1 teaspoon salt½ teaspoon pepper
1 teaspoon garlic powder12 thin provolone slices
12 thin ham sliceschicken gravy
Directions
Pound each chicken breast to 1/4" thick. Set aside.
You will need 3 bowls to make each part of the coating forthe chicken. Place cornstarch in a bowl. Break egg into the second bowl. Add 2 tablespoons water and beat. Add breadcrumbs to the third bowl. Add salt, pepper, and garlic. Mix well.
Sprinkle chicken with salt and pepper. Place 3 cheese slices and 3 ham slices on each chicken breast. Rollup each chicken breast.
Dip each chicken breast in cornstarch, then dip in egg, then dip in breadcrumbs. Place on a baking sheet.
Bake for 30 minutes at 350. Top each chicken breast with chicken gravy.
