Chicken Chow Mein
Ingredients
4 tablespoons vegetable oil
1 large onion, cut in half and sliced thin
2 cups celery, sliced thin
2 cups fresh bean sprouts
1 cup shredded carrots
4 cups bok choy, sliced thin2 cups chicken breast, cut into bite size pieces
2 tablespoons corn strach
3 tablespoons soy sauce
1 cup chicken broth
Chow mein noodles
Directions
In a large sauce pan, heat oil over medium heat. Add onions, celery, bean sprouts, carrots and bok choy. Cook for 10 minutes, stirring occasionally.
Add chicken. Mix well. Cook for 5 minutes.
Add corn starch. Mix well. Cook for 2 minutes.
Add soy sauce and chicken broth. Mix well. Reduce heat to medium low and simmer for 20 minutes. Serve with chow mein noodles.
Notes:
You can substitute shrimp or pork for chicken.
