Chicken and Rice
This crockpot meal is easy to prepare, comforting, and loaded with vegetables. I always try to incorporate as many vegetables as I can into crockpot meals.
Ingredients
6 boneless , skinless chicken thighs
1 cup onion, diced
4 celery stalks, cut into 1/4 inch slices
3 large carrots, cut into 1/4 inch slices10 3/4 ounce can cream of chicken soup
10 3/4 ounce can cream of celery soup
2 1/2 cups chicken broth
1 1/2 cups rice
Directions
Place chicken thighs in the bottom of a crockpot. Place onion, celery, and carrots on top of chicken thighs.
Add chicken soup, celery soup, and broth to scrockpot. Mix well.
Cook on low for 6 hours.
Add rice to crockpoot. Mix well. Cook for 25 minutes of until rice in cooked.
