Caprese Stuffed Chicken
Tomato and mozzarella is one of my favorite flavor combinations, so I took my spinach stuffed chicken recipe and substituted the creamy spinach with tomatoes and mozzarella. I served it with orzo and roasted asparagus.
Ingredients
4 boneless, skinless chicken breasts1 teaspoon salt½ teaspoon pepper5 plum tomatoes, cut into ¼ inch slices16 ounces sliced fresh mozzarella6 fresh basil leaves½ cup parmesan cheese
Directions
Make vertical cuts, about ¾ of an inch apart, without cutting all the way through the chicken. Place chicken in baking dish. Sprinkle salt and pepper on chicken.
Place a tomato slice and a mozzarella slice in each cut of the chicken. Rollup basil leaves and cut into thin strips. Sprinkle basil and parmesan cheese over chicken.
Bake for 30 minutes at 350.
