Caprese Chicken Parmesan
Ingredients
8 pieces thin sliced chicken breast8 ounces Italian dressing5 plum tomatoes2 tablespoons chopped fresh basil8 ounces fresh mozzarella cheese1 cup shredded parmesan cheese
Directions
Marinate chicken in Italian dressing overnight.
In a large frying pan, over medium high heat, cook chicken for on minute on each side. Place cooked chicken in a 13 x 9 baking dish.
Slice tomatoes into 1/4 inch slices. Place sliced tomatoes on top of chicken. Sprinkle basil on top of tomatoes.
Slice mozzarella cheese into 1/4 inch slices. Place sliced cheese on top of tomatoes. Sprinkle parmesan cheese on top of mozzarella cheese.
Bake at 425 for 15 minutes.
