Baked Florentine Chicken
When I created this recipe I was trying to incorporate more vegetables into my diet. I had been out to lunch and had spinach and roasted red peppers on a panini. It was so good it inspired me to create this dish. Sometimes I leave off the mozzarella so it doesn't have as much fat.
Ingredients
3 tablespoons flour1 teaspoon granulated garlic1 teaspoon salt1/2 teaspoon ground black pepper
4 thin sliced chicken breasts3 tablespoon olive oil1 large vidalia onion, cut in half and sliced8 ounces baby spinach6 ounces roasted red peppers, cut into strips
1 cup shredded mozzarella cheese2 tablespoons grated parmesan cheese
Directions
In medium bowl add flour, granulated garlic, salt and pepper. Coat each piece of chicken with flour mixture.
Heat 1 tablespoon oil in a large saute pan over medium high heat. Add chicken and cook for 3 - 4 minutes, turning occasionally, until lightly browned and just cooked through. Place on a baking tray and set aside.
Reduce heat to medium. Heat the remaining 2 tablespoons oil. Add the onions to the pan. Cook, stirring occasionally, for 10 minutes. Add spinach and cook for 5 minutes, stirring frequently. Add salt and pepper to taste.
Place 1/4 of onion and spinach mixture on top of each piece of chicken. Place 1/4 of red peppers on to of each piece of chicken. Top each with mozzarella cheese. Spinkle with parmesan cheese.
Bake at 375 for 15 minutes.
