Vegetable Lasagna
Vegetable lasagna is one of my favorite dishes. The first time I made it was from a recipe in one of my many cookbooks, but it was a little to heavy for me. I lightened up the recipe by using milk instead of cream and less ricotta cheese. This is the final result.
Ingredients
6 tablespoons butter4 tablespoons flour4 cups milk2 teaspoons salt1 teaspoon pepper
2 pounds ricotta cheese20 ounces frozen chopped spinach, thawed8 ounces shredded carrots12 lasagna noodles 2 cups shredded mozzarella cheese1 cup grated parmesan cheese
Directions
In a large saucepan, over medium heat, melt butter. Add flour and stir with a wisk until butter and flour are completely blended and smooth. Cook for 1 minute. Add milk, salt and pepper. Stir with wisk until flour mixture is completely blended. Reduced heat to medium low and cook for 5 minutes. Sauce should start to thicken.
Squeeze water out of spinach.
Place ricotta cheese in a bowl. Add spinach and mix well.
Spread 3/4 cup of sauce in the bottom of a 13 x 9 baking dish. Spread sauce so it covers the bottom of the pan.
Cook lasagna noodles, according to package directions minus 2 minutes.
Place 4 lasagna noodles in bottom of 13 x 9 pan. Cover with 1/3 of the sauce. Spread ½ of ricotta cheese mixture over noodles. Sprinkle 1/2 shredded carrots over ricotta. Sprinkle with ½ cup mozzarella and ¼ cup parmesan.
Place 4 lasagna noodles on top of cheese. Cover with 1/3 of the sauce. Spread remaining ricotta cheese mixture over noodles. Sprinkle remaining carrots over ricotta. Sprinkle with ½ cup mozzarella and ¼ cup parmesan.
Place 4 lasagna noodles on top of cheese. Cover with remaining sauce. Sprinkle 1 cup mozzarella and ½ cup parmesan on top.
Bake at 350 for 45 minutes. Let stand for at least 30 minutes before cutting it into squares.
